The graduate certificate in Food Quality and Safety is designed for nutrition and food science graduate students interested in food microbiology, sanitation, regulations, quality control, and quality assurance. The students will be prepared to meet demand of careers in food safety and quality. This certificate meets the growing need for regulatory and safety experts in food and supplement industry.

Admission Requirements:


Submit the following items to:

                                 Jackson College of Graduate Studies

• Online application for admission (www.uco.edu/graduate/).

• Official copies of undergraduate and graduate transcripts from each institution attended with all degrees posted. All transcripts must be from accredited institutions.

• Undergraduate transcripts must show a minimum 2.75 GPA overall or 2.75 GPA in the last 60 hours attempted, and a grade of C or better in the courses listed below.

• The following undergraduate courses are required and are needed prior to enrolling in the graduate courses for this certificate:

  • NTRN 1613 Principles of Food Preparation and Lab,
  • NTRN 3131 Food Safety and Sanitation,
  • NTRN 4123 Food Science and Lab,

• Equivalent courses may be substituted with permission of the Program Advisor.

• Students with a native language other than English must submit evidence of English language proficiency. See Admission to Graduate Studies - English Language Proficiency  .

• Students falling below these standards may qualify for conditional admission. See Admission to Graduate Studies  .

Other Requirements


• Plan of Study. Each student must file a plan of study with his/ her graduate program advisor and the Jackson College of Graduate Studies (JCGS) by the end of the first semester of graduate work. The plan must be signed and dated by the student and the graduate program advisor before it can be considered official.

• Academic Standards. Meet the following course work standards:

  • Maintain an overall GPA of 3.00 GPA or higher.
  • No more than one “C” and no grade below a C.
  • No more than six advisor-approved hours from traditional correspondence courses.

• Final Requirements. Apply for certificate upon completion through JCGS.

TOTAL HOURS REQUIRED: 12 HOURS
